20 green Prawns about (5 per person), peeled & deveined
Avocado Oil
Salad ingredients – Lettuce, Coriander, Mint, grated carrot, thinly sliced red onion, sliced fennel, Granny smith Apples sliced into match sticks
Lime wedges to serve
Directions
- Cook Prawns (see recipe) in pan with Avocado oil & Pomodoras Ginger & Lime Dressing
- Cook for about 5 minutes until the balsamic reduces and is a little sticky
- Assemble salad & mix through lots of mint & coriander
- Dress the salad with both the avocado oil &Â Ginger & Lime Balsamic Dressing
- Serve with a wedge of lime on the side
Notes
- *Chef’s Tip – If you like a bit of spice you can add Cajun to the prawns at the cooking process.
