Creamy chicken – one pot

I just love easy one pot recipe ideas, don’t you. It saves me cleaning up time and less washing up. And you can’t go wrong with a wholesome chicken & vege staple.

Easy One pot chicken, potato & green beans with Smokey BBQ Mustard

Ingredients

  • 4-6 chicken thighs bone in, skin on 

  • Salt and pepper to season

  • 2 tablespoon oil

  • 1 tablespoons water

  • 2 cloves of crushed confit garlic (or minced)

  • 1/4 cup honey

  • 1/2 cup Smokey BBQ Mustard

  • 2 tablespoons Lemon and Ginger Mustard

  • 500 g new potatoes quartered

  • 250 g green beans (topped & tailed)

Directions

  • Preheat oven to 185°C. Generously season chicken thighs with salt, pepper
  • Heat oil in a large, oven-proof non stick pan or baking dish, over medium-high heat. Sear chicken thighs for 5 minutes each side, until the skin is golden.
  • Add the garlic in the same pan/dish around the chicken for 1 minute.
  • Add the honey, both mustards and water to the pan, mixing well, and coat the chicken.
  • Add the potatoes; mix them through the sauce. Season with salt and pepper, to your tastes. Allow the honey mustard sauce to simmer for 2 minutes
  • Then transfer to the hot oven and bake for 35 minutes
  • Remove from the oven after 35 min and add in the green beans (mixing them through the sauce)
  • Return to the oven to bake for another 10 minutes, or until the chicken is completely cooked through
