CARAMELIZED FIG salad

6 Ripe Figs
Rocket & Spinach
100g Gorgonzloa
Sliced almonds
olives (optional)
Pomodoras Grape & Bay Balsamic Dressing
Directions
- STEP 1.
- Pre heat oven to 180 degrees
- Roast the sliced almonds on a tray for 5 minutes
- Then take out to cool
- STEP 2 .
- Turn oven up to 210 degrees
- Slice figs in half and cut off the stem
- Pre heat a sautéed pan on a medium heat and add a good splash of Grape & Bay Balsamic Dressing
- Add the figs FACE down (making sure the figs come in contact with the balsamic for that caramelisation
- Cook until nice and brown / caramelised then figs turn over for 1 minute
- Then take out of pan and place on a tray and put in the oven for 8 minutes
- To Serve
- Put 3 figs around the plate
- place rocket & spinach in the middle of the plate
- Sprinkle the roasted almonds and olives over the salad
- place a slice of gorgonzola on top and then dress with Grape & Bay Balsamic Dressing
Notes
- You could also serve with as a side salad to accompany Crispy Duck, Roasted Pork belly or even pumpkin arancini (see more recipes)
