Ingredients

  • 6 Ripe Figs

  • Rocket & Spinach

  • 100g Gorgonzloa

  • Sliced almonds

  • olives (optional)

  • Pomodoras Grape & Bay Balsamic Dressing

Directions

  • STEP 1.
  • Pre heat oven to 180 degrees
  • Roast the sliced almonds on a tray for 5 minutes
  • Then take out to cool
  • STEP 2 .
  • Turn oven up to 210 degrees
  • Slice figs in half and cut off the stem
  • Pre heat a sautéed pan on a medium heat and add a good splash of Grape & Bay Balsamic Dressing
  • Add the figs FACE down (making sure the figs come in contact with the balsamic for that caramelisation
  • Cook until nice and brown / caramelised then figs turn over for 1 minute
  • Then take out of pan and place on a tray and put in the oven for 8 minutes
  • To Serve
  • Put 3 figs around the plate
  • place rocket & spinach in the middle of the plate
  • Sprinkle the roasted almonds and olives over the salad
  • place a slice of gorgonzola on top and then dress with Grape & Bay Balsamic Dressing

Notes

  • You could also serve with as a side salad to accompany Crispy Duck, Roasted Pork belly or even pumpkin arancini (see more recipes)
