Ingredients

  • 20 green Prawns about (5 per person), peeled & deveined

  • Avocado Oil

  • Pomodoras Ginger and Lime Dressing.

  • Salad ingredients – Lettuce, Coriander, Mint, grated carrot, thinly sliced red onion, sliced fennel, Granny smith Apples sliced into match sticks

  • Lime wedges to serve

Directions

  • Cook Prawns (see recipe) in pan with Avocado oil & Pomodoras Ginger and Lime Dressing
  • Cook for about 5 minutes until the balsamic reduces and is a little sticky
  • Assemble salad & mix through lots of mint & coriander
  • Dress the salad with both the avocado oil & Ginger & Lime Balsamic Dressing
  • Serve with a wedge of lime on the side

Notes

  • *Chef’s Tip – If you like a bit of spice you can add Cajun to the prawns at the cooking process.
