Ingredients


  • 1 tbsp sesame seeds

  • 1 tsp cumin seeds

  • 140 g water

  • 85g Pomodoras ginger & lime balsamic dressing

  • 1 tbsp cornflour

  • 45 g (3 tbsp) sesame oil, divided

  • 100g oyster sauce

  • 600 g beef tenderloin, thinly sliced

  • 2 garlic cloves, minced

  • 1 tbsp fresh ginger, grated

  • 3 spring onions, chopped

  • 1 red capsicum, thinly sliced

  • 1 carrot, julienned

  • 100g sugar snaps

  • 200 g ramen noodles (egg noodles or rice noodles)

  • Extra ginger & lime balsamic vinegar – to serve

  • Extra sesame seeds – for garnish

Directions

  • Heat a small, dry skillet over medium heat.
    Add the sesame seeds and cumin seeds, and toast them for about 3 minutes, stirring frequently, until fragrant.
    Remove from heat and allow them to cool slightly.
    Using a mortar and pestle or a spice grinder, grind the roasted seeds to a fine powder. Set aside.
  • In a bowl, combine the ground spices with water, ginger & lime balsamic, and cornflour. Mix well and set aside.
  • Heat 1 tbsp of sesame oil in a large skillet or wok over high heat.
    Add half of the beef slices in a single layer and sauté until browned on all sides, about 2-3 minutes. Remove from the pan and set aside in a large bowl.
    Repeat with the remaining beef. Transfer the second batch to the same bowl and keep warm.
  • In the same skillet or wok, heat the remaining 1 tbsp of sesame oil over medium-high heat.
    Add the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.
    Add the spring onions, red capsicum, sugar snaps and carrots. Sauté for 4-5 minutes until the vegetables are tender.
  • Stir the prepared sauce and pour it over the vegetables in the skillet. Cook for 5 minutes, stirring occasionally, until the sauce thickens slightly.
  • Add the reserved beef back into the skillet with the vegetables and sauce.
    Stir well to combine everything, ensuring the beef is coated with the sauce. Keep warm.
  • Cook the noodles according to the package instructions. Drain and transfer to a serving bowl.
  • Combine the noodles with the sautéed meat and vegetables, tossing well to coat the noodles with the sauce.
  • Drizzle extra ginger & lime balsamic dressing. Serve the dish hot, garnished with extra sesame seeds if desired. Enjoy!
