Prawns (5 per person) Avocado Oil, Lettuce, Coriander, Mint, grated carrot, thinly sliced red onion, sliced fennel, Granny smith Apples sliced into match sticks, Lime wedges, Pomodoras Ginger & Lime Dressing.
- Cook Prawns in pan with Avocado oil & Pomodoras Ginger & Lime Dressing
- Reduce dressing until caramelized or sticky
- Assemble salad & mix through lots of mint & coriander
- Dress the salad with both the avocado oil & Pomodoras Ginger & Lime Dressing
- Serve with a wedge of lime on the side
*Chef’s Tip – If you like a bit of spice you can add Cajun to the prawns at the cooking process.
